Actually, Haricot Verts are green beans. Like many other vegetables, there are many varieties of green beans. Most people are familiar with snap green beans, string beans, and French green beans.

Haricot Vert (pronounced “arr-ee-co-vair”) is a French green bean that is long and slender. They are more delicate as they are harvested at an earlier stage in their growth. They also have a more delicate and refined taste. This lends to great flavor and short cook times.

I became a big fan of haricot verts while working at the restaurant. I remember many times my mother with her aunt and mother snapping beans to make their southern green bean casserole. It wasn’t in my top anything, but I ate them.

Whenever my father made green beans, they were almost always canned. I found I gravitated toward the Green Giant French Cut Green Beans. Eventually, my father bought mainly only those. I started then to make my own recipe with those French cut green beans. I would add garlic powder, butter, and a can on mini mushrooms. We all loved them!

Once I started working at the restaurant, Ruga, I ditched the canned green beans and mushrooms, and began using fresh baby bella mushroom and, you guessed it, fresh haricot verts. They were so tasty, with a delicate flavor and nice crisp crunch.

  • 8 ounces Haricot Verts
  • 8 Ounces Baby Bella Mushrooms, sliced
  • 4 cloves Garlic, sliced
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Butter, divided
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper

Haricot Verts – You can cut the Haricot Verts in quarters if you would like smaller pieces instead of whole beans.

 

How Is Haricot Verts (French Green Beans) with Garlic and Mushrooms Made?

  1. In a medium skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
  2. Add the green beans and mushrooms. Season with salt and pepper. Cook for 5 minutes.
  3. Add the garlic and remaining butter. Cook for another 5 minutes.

Variation – Blanching the Haricot Verts First

My favorite way to eat them is to blanch the haricot verts first. This keeps a nice crunch and a bright color.

  1. Add water and plenty of ice to a large bowl. This is called an “ice bath.”
  2. Boil a pot of water large enough to fit the haricot verts and water 1 inch above the beans.
  3. Once the water is boiling, add the beans and cook for only 3 minutes.
  4. At the 3 minute mark, either drain the boiling water or use a utensil to remove the beans.
  5. Immediately, place the beans in the ice bath for 3 minute. This will stop the cooking.
  6. When you go to saute them, you will only need to keep them in the skillet for about 1 minute, just enough time to coat them with the flavors from the skillet.

 

What Can I Do with the Leftovers?

The leftovers keep 4-5 days in the fridge in an airtight container. Reheat them on the stove in a skillet.

 

Can I Freeze Haricot Verts (French Green Beans) with Garlic and Mushrooms?

Yes! You need to use an airtight container or freezer bag and it’ll stay tasty for up to 3 months. Thaw it on the counter or overnight in the fridge. Reheat them on the stove in a skillet.
