What Is French Onion Soup?
French Onion Soup is a soup with caramelized onions that has a base made with beef stock and white wine. It is topped with a piece of bread or croutons and cheese. There are endless varieties using different onions, wines, breads, and cheeses. It was created in France in the 18th century.
The first time I even saw French Onion Soup was at a place called Casey O’toole’s. The melted cheese oozing over the edges of the bowl with that slight char. Then the cheese pull and that soggy piece of bread. I”m not a soup guy, but French Onion Soup go it’s hooks in me.

As I say often, my wife is the Soup Queen. So she came up with this killer recipe. I really don’t remember the restaurant we were at, but we ordered French Onion Soup and it was served with croutons and shaved Parmesan and Romano cheeses. We both fell in love with that version. My wife never liked the soggy bread and the cheese pull like I did, so she changed her recipe to incorporate the croutons and cheeses
My wife found that using different onions gives a more balanced flavor that has more depth as opposed to using just 1 kind of onion. She uses Vidalia and yellow onions with shallots. She also uses 3 kinds of wine – red, white, and sherry. Additionally, she adds both beef stock and chicken stock. Is it really worth the effort? Absolutely! All of this combined gives a balance between bold and delicate, savory and sweet flavors. It’s unlike anything I have never tasted anywhere else.
What Ingredients Are in French Onion Soup?
- Butter
- Vidalia Onions
- Yellow Onions
- Shallots
- Garlic Cloves
- Flour
- Red Wine
- White Wine
- Sherry
- Sugar
- Chicken Broth
- Beef Broth
- Water
- Dijon Mustard
- Garlic Flavored Croutons
- Parmesan Cheese
- Romano Cheese
- Asiago Cheese
- Fresh Chives
Ingredient Notes
Cheeses – we like the combination of 3 cheeses, Parmesan, Romano, and Asiago. However, it tastes great if you use only Parmesan. Gruyere is the cheese used in classic French Onion Soup. Other common cheeses are, Swiss and Provolone.
How Is French Onion Soup Made?
- In large stockpot over medium heat, melt butter and add onions and shallots. Stir often for 40-60 minutes, until onions are caramelized to a golden brown, but not burnt. This is the key to a really good French Onion Soup. It is worth taking your time!
- Sprinkle flour onto the onions and add garlic, stirring constantly for 3 minutes.
- Slowly add red wine, white wine, sherry, and sugar while stirring onion mixture constantly to prevent lumps, Simmer and stir often for 15 minutes to reduce.
- Add chicken broth, beef broth, water, and Dijon mustard. Stir well.
- Bring soup to a boil over medium heat, stirring often. Then reduce to simmer uncovered for 20-30 minutes. Taste and season with salt and pepper.
- To serve soup, place a handful of croutons in each bowl. Top croutons with 2 Tablespoons cheese. Ladle soup over croutons and cheese. Garnish with fresh chives. Bon Appetit!
What Can I Do with the Leftovers?
You can keep these in the fridge for up to 3 days. Reheat them on the stove in a pot or saucepan. A microwave will work, but should be the last option.
You can also freeze the leftover soup for up to 6 months as well. Thaw on the counter, then use the recommended heat methods I mentioned above.
