Garlic Cilantro Lime Sauce

Garlic Cilantro Lime Sauce is the perfect topping for your Latin food. It is super quick and easy to make, once you try it, you’ll make this sauce again and again. The creaminess and the tang of this sauce is addictive. Inspired but the sauce at Pollo Tropical, this always gets high marks from family and friends!

 

Garlic Cilantro Lime Sauce

My first experience with this sauce was in Puerto Rico in 2000. I went on a trip with some friends and had an exciting time. I remember El Chupacabra was in the news every night and one of our friends was so terrified, especially when we took a hike in the El Yunque rainforest since that’s where it was believed the Chupacabra lived. It was so hilarious.

Anyway, not to bore you with stories, this was also the first time I went to a Polla Tropical. I fell in love with the place. I’m not here to endorse it, but my whole family loves it!

This place has several mind-blowing sauces. My favorites are their Cilantro Garlic Sauce, their Spicy Poyo-Poyo, and their Curry Mustard.

I am still working on mastering the latter two, but I have mastered this first one – their Cilantro Garlic Sauce. This recipe is my Copycat version of that sauce.

What Ingredients Are in Garlic Cilantro Lime Sauce?

  • Sour Cream
  • Mayonnaise
  • Lime Juice
  • White Vinegar Garlic
  • Fresh Garlic
  • Kosher Salt
  • Black Pepper

 

Cilantro Garlic Lime Sauce

Instructions

Place the sour cream, mayonnaise, lime juice, white vinegar,garlic, salt, and pepper in a small processor or blender, and blend until smooth. Refrigerate until ready to serve.

 

Pro Tips

This is so delicious, you will be tempted to make a lot of this. However, there is a caution with that. Fresh garlic has a tendency to increase in spiciness and becomes very pungent. We kept the leftovers to the next day and it was so spicy, we couldn’t eat it. So, I’m not going to tell you don’t do it, but, if you want to make a lot and plan on keeping it overnight, just be prepared.

 

What Can This Be Served On?

I make this sauce all the time. Whenever I make rice and beans, my Crispy Fish Tacos, my Marinated Cuban Chicken Thighs, and lots more, I make a batch of this sauce. Actually, I make a double batch because we use a lot of this.

My favorite way to have this is with my version of Pollo Tropical’s classic chicken and rice bowl. It just a simple rice and beans in a bowl with grilled or sauteed chicken breast over it. I add this sauce and some hot sauce and I’m good to go!

Ingredients

  • 1 cup Sour Cream
  • 1/4 cup Mayonnaise
  • 2 Tablespoons Lime Juice
  • 2 Tablespoons Fresh Cilantro, rough chopped
  • 1 Tablespoon White Vinegar
  • 6 cloves Garlic, smashed
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. Place the sour cream, mayonnaise, lime juice, white vinegar,garlic, salt, and pepper in a small processor or blender, and blend until smooth.

  2. For best results, refrigerate for an hour or until ready to serve.
