We love Hawaii!  My wife and I traveled there and spent 2 weeks exploring 3 islands. It’s so much more breathtaking in person than on TV. The flowers, the waterfalls, the ocean, everything!

Part of their fascinating culture, Hawaiians love food. And they’re really good at at making it delicious!  No matter where we went, we had amazing food – nice restaurants, casual restaurants, even side of the road vendors. Everything was so fresh! We happened to avoid the Spam while we were there, which we’ve been told we missed out on the truly “Hawaiian” experience by doing so. Buuuut, I’m glad we stuck with the fresh food!

Sweet Hawaiian Fish and Vegetables

Here is a sweet and mildly spicy fish meal we know you’ll love! First off, I had to learn to replicate the food we loved while in Hawaii. So I set out on making a simple, awesome, and memorable fish dish.  Second, my daughter has come to love all things Hawaiian, especially the meals I use coconut and pineapple. So this is one she loves!

We made this meal for family and they told some friends.  We shared the recipe with them, and they shared it with their friends. This recipe has become a big hit before we could get it posted to share it with you!

  • Fish Fillets like Mahi Mahi
  • Olive Oil
  • Coconut Oil
  • Bell Pepper
  • Sweet Onion
  • Fresh Ginger
  • Fresh Garlic
  • Sweet Chili Sauce
  • Teriyaki Sauce
  • Fish Sauce
  • Pineapple Tidbits

Ingredient Notes

Fish – Mahi Mahi is a common white fish used in Hawaiian cooking. If you can’t find Mahi Mahi, you can substitute cod or even tilapia

Coconut Oil – if you do not have coconut oil, you can use canola or olive oil.

How Do You Make Sweet Hawaiian Fish and Vegetables?

Sweet Vegetables

  1. In a medium skillet over medium-high heat, heat 2 tablespoons coconut oil.  add the bell peppers and onions.  Season with salt and pepper. Cook until they start to turn brown, but still firm, about 6-8 minutes.
  2. Add the ginger and garlic and mix thoroughly.  Cook for another 2 minutes.
  3. Add the sweet chili sauce, Teriyaki sauce, and fish sauce.  Stir to mix well.  Cook for another 2 minutes
  4. Stir in the pineapple tidbits and cook another 2 minutes.

Fish

  1. At the same time you start the bell peppers and onions, heat 2 tablespoons olive oil in a medium skillet, over medium heat.  Pat the fish dry. Salt and pepper one side of the fish fillets and place them in the skillet seasoned side down. The fish will lift off the pan with relative easy when it’s ready to turn, about 3-4 minutes.
  2. Just before turning the fillets over, season the side facing up with salt and pepper and flip immediately.
  3. Cook the fish for 3-4 minutes, 6-8 minutes total.*
  4. Place the fish on a plate and top with some of the sweet vegetable mix. Serve over white rice.

*NOTE: If using a thinner cut of fish, like Tilapia, your cook time will be shorter.

What Can I Do with the Leftovers?

If you have any leftovers, here are a few suggestions. First, you want to keep in mind to use leftovers within 3-4 day of the original cook day. Additionally, with fish the quality of taste drops steeply, meaning it you most likely won’t enjoy the taste before it goes bad. So try to eat leftover the next day if possible.

  • You can reheat them in a skillet within the next day or 2.
  • Make a salad and have the fish and veggies over that.
  • You can freeze it up to 3 months.

Ingredients

  • 1-1.5 lbs Fish Fillets (like Mahi Mahi)
  • 2 Tabelspoons Olive Oil

  • 2 Cups Sweet Onion, 1/4 inch diced
  • 2 Tablespoons Fresh Ginger, minced

  • 1/4 Cup Sweet Chili Sauce
  • 1/4 Cup Teriyaki Sauce
  • 1 teaspoon Fish Sauce

  • Salt & Pepper to taste
