At times, we all dread the midweek grind. We are so busy and we want to eat well. Many of us do, but most do not. Even the ones who do want variety. Well . . . here is an awesome meal that is so easy to make, that it takes less time than grabbing out some frozen food from the freezer and microwaving it.

This meal takes about 30 minutes on a bad day. And it’s so delicious! And you know what’s even better? My kids didn’t even know it was zucchini! They didn’t even believe me when I told them; they thought I was goofing around to them.

While I love rich foods like most everyone else, I do recognize the health impact those meals have. So I do make my fair share of healthy meals, especially as I get older and am more aware of my health. One way I do that is by cutting carbs and fat. This meal is perfect for that.

Zucchinis have so many health benefits. While I’m not going to enumerate on those benefits, I do appreciate there value. They’re good for weight loss, heart health, eye health, help controls diabetes, lowers cholesterol, can cure asthma, helps prevent colon cancer, improves digestion, and much more.

This meal is so simple, I allow my 12-year-old daughter make this with minimal adult supervision. You really can’t beat the simplicity here. Being a one-pan meal makes it even

 

What Ingredients Are in One Pan Zoodles Shrimp Scampi?One Pan Zoodles Shrimp Scampi

  • Olive Oil
  • Medium Shrimp
  • Onion
  • Fresh Garlic
  • Butter
  • Lemon Juice
  • Cherry Tomatoes
  • Zucchini
  • Fresh Basil
  • Shredded Parmesan Cheese
  • Salt and Pepper

 

Ingredient Notes & Substitutions

Butter – shrimp scampi has a lot of butter in it. But, if you want to eliminate the butter, add another tablespoon of olive oil.

Lemon Juice – if you want a more scampi flavor, you can add in some white wine either instead of the lemon juice or in addition to it.

Zucchini – I have links below to a couple vegetable spiral slicer. If you do not own a vegetable spiral slicer, you can thinly julienne the zucchinis. Be sure to remove the spirals that are all or mostly seeds as these become mushy quickly.

Fresh Basil – believe it or not, the fresh basil gives this dish the pop it needs. In my opinion, this can’t be left out or substituted.

 

How Is One Pan Zoodles Shrimp Scampi Made?

  1. In a medium to large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat. Add the shrimp and season with salt and pepper. Cook through on both sides, about 3 minutes. Be careful to not overcook. Set aside on a plate.
  2. In the same pan, add the other 2 tablespoons of olive oil. Then add the onions and season with a touch of salt and pepper. Cook for 3-5 minutes until they become translucent.
  3. Next, add the garlic, the remaining 2 tablespoons of butter, and the lemon juice. Cook for 1 minute.
  4. Add the cherry tomatoes and cook for 2 minutes.
  5. Add in the zucchini noodles, season with a little salt and pepper, and stir them in to completely coat with the other ingredients. Cook for 1 minute and add the shrimp back in to warm them back up. Cook for another 1-2 minutes.
  6. Top with fresh basil and shredded Parmesan cheese.

 

What Can I Do with the Leftovers?

Leftovers will keep well in the fridge for about 3-4 days. The zucchini does tend to become soggy. I have plastic containers with a grated insert for the bottom. I use these for storing this meal.

To reheat it, first remove the shrimp and tomatoes and set them aside for now. Warm up the vegetables on the stove to get rid of some the moisture in the zoodles. After most of the moisture is gone, add in the shrimp and tomatoes until they are heated up.

 

Can I Freeze One Pan Zoodles Shrimp Scampi?

This meal doesn’t do well frozen, but you can certainly give it a shot.

Ingredients

  • 2 Tablespoons Olive Oil, divided

  • 1 cup Onion, diced
  • 1/4 cup Garlic, minced (about 8 cloves)

  • 4 medium Zucchini, spiraled*

Instructions
