This is so full of flavor it will surprise you just how good this tastes! My kids even eat it! With only 4 ingredients, this is done in under 30 minutes so it makes for a great midweek meal. Awesome Low Carb Meal
Spaghetti Squash with Turkey Sausage Bolognese is the low carb version of your traditional Spaghetti and Meat Sauce. With so many people on low carb diets and switching to low carb lifestyles, it can become challenging to find a variety of delicious meals to keep it interesting and to keep from getting bored. Unfortunately for many, this leads to giving up.
I personally was on a low carb diet for several months and lost a lot of weight. I wouldn’t label what I did as any particular plan like “Keto” or anything, but I do understand the struggle. Fortunately for me, I have a background that helped me cook tasty food that fit my diet plan. I did have some epic fails, but, by and large, I found a number of meals that turned out awesome. Not only did I love them, but my picky kids loved them, too!
This one of them! It became a regular in our rotation of meals. I do still try to limit my pasta, rice, and potato intake, so I still make this meal a lot. It’s definitely one of my favorites!
Italian Turkey Sausage . . . Meat Sauce
Bolognese basically is the Italian word for ‘meat sauce.’ It’s not too hard to find Italian Turkey Sausage these days. Our local grocery store carries this in links and in bulk, as well as spicy turkey sausage. We often buy turkey sausage instead of regular pork to help keep things on the healthy side.
If you can’t find bulk turkey sausage, get links if you can. If you can’t find turkey sausage, you can use ground turkey and add seasoning that you like. I use salt, pepper, dried oregano, dried basil, garlic powder, and onion powder.
What Ingredients Are Used in Spaghetti Squash with Turkey Sausage Bolognese
- Spaghetti Squash
- Italian Turkey Sausage
- Olive Oil
- Tomato Sauce, homemade or store bought
- Fresh Basil
- Grated Parmesan Cheese
Best Tomato Sauce to Use
Like with many dishes, the secret is in the sauce! I always use my own homemade tomato sauce. IF, on an extremely rare occasion I am out of my own tomato sauce, I buy Bertolli Tomato & Basil. However, it really is worth the effort to make your own sauce. If you have a favorite recipe that you love, use it. If you don’t, make a batch of my Best Homemade Tomato Sauce. Easy Spaghetti Squash Cooking Instructions
Spaghetti squash? Many people have never even heard of it! But it so easy to make and is kinda tasty. We had our social media girl over and she never even heard of it before, never mind eating it. And she’s a self-proclaimed “picky eater.” She knows our house rule that everything has to be tried at least once. So, we had her try it. She really liked it!
Most cooking instructions take 45 minutes in the oven. However, my way of making spaghetti squash takes less than 20! AND, I have a little trick to help cut it easier, too!
- First, remove the stem if there is one, and score the squash all the way around it lengthwise.
- Place it in a microwave safe bowl like a casserole pan and microwave it for 5 minutes. This will soften it enough to be able to cut it easier!
- Next, slice off a small piece from the underside. This will help to keep it in place so it doesn’t roll around.
- Now cut it in half and scrape out the seeds with a metal spoon.
- Place the bottom half (the half you sliced off a piece) back in the microwave safe bowl and put 2 tablespoons of water in it.
- Place the other half on top and microwave for 10 minutes. Once the time is up, remove the top half and set on a cutting board or something similar. The squash will be very hot, so be careful! (I use a kitchen towel to remove the top.) Let the squash cool for several minutes.
- When it’s cool enough to handle (I use gloves), scrape out the ‘spaghetti’ using a fork.
- Add butter or olive oil and salt and pepper if desired. DONE!
That’s it! All under 30 minutes!
How Is Spaghetti Squash with Turkey Sausage Bolognese Made?
- Use the instructions above to cook the spaghetti squash.
- While that is cooking, heat the olive oil in a medium skillet over medium heat. Add the turkey sausage and brown it. Be sure to use your wooden spoon or spatula to break it up in small pieces.
- After the turkey is completely browned, add 1 cup of tomato sauce. Stir it thoroughly and heat it up, about 2-3 minutes.
- Heat the remaining 1 cup of tomato sauce on the stove or in the microwave.
- Serve the turkey sausage meat sauce over the spaghetti squash. Add more tomato sauce if needed or desired.
- Top with your favorite toppings, like Parmesan cheese and torn fresh basil leaves.
