Tangy Dijon Cheddar Cauliflower
I really don’t know where my mother came up with this, but she would make Tangy Dijon Cheddar Cauliflower all the time for us growing up. You know how kids are, gotta do whatever it takes to get them to eat the veggies! This is pretty much the only way I would eat cauliflower as a child. Obviously, I’ve come to appreciate cauliflower much more as an adult. But I still love this dish! Especially since I’ve changed it to be even better!
What Are Benefits of Cauliflower?
Of course, we all know vegetables have good for our overall health. But cauliflower is awesome! It’s part of the cabbage family, so it’s loaded with tons of nutrients like B-vitamins and lots of fiber. It also contains high amounts of antioxidants and phytonutrients which protect against cancer. The fiber helps with weight loss, the choline helps with learning and memory, and the list goes on and on.
However, from a culinary perspective, cauliflower is an excellent substitute for many items. With the widely publicized benefits of a low-carb diet, cauliflower has risen to the top of choices for many lifestyle diet plans like Keto. Why?
Basically, it’s because cauliflower is pretty much a blank slate, meaning, you can add almost anything to it to make it taste awesome. Granted, some have taken cauliflower to ridiculous level, however, I love using it myself for a rice alternative and many other applications.
What Ingredients Go in Tangy Dijon Cheddar Cauliflower?
This is so super simple. There are only 4 ingredients! Four? then why are there 5 things in the list? Because water used for steaming usually is not considered an “ingredient” because it’s not getting mixed in the dish.
- 1 head Cauliflower
- 1/4 cup Water
- 1/2 cup Mayonnaise
- 1 teaspoon Dijon Mustard I use Maille
- 1 cup Sharp or Extra Sharp Cheddar Cheese, shredded
Ingredient Notes
Mustard – my mother has always made this with regular yellow mustard, so that’s the way I had this growing up. It adds more tang. So if you don’t have Dijon, you can use yellow.
Cheese – the taste is so different between mild, sharp and extra sharp cheddar.
Garlic Powder – my mother use to add 1/2 teaspoon of garlic powder to the mix. I can’t say I miss it. But it is quite yummy with it.
Cooking Instructions
1. Carefully cut out the stem from the head of cauliflower.
2. Pour the water in a microwave safe bowl, like a casserole dish.Place the cauliflower in the bowl stem side down. Microwave for 10 minutes on high.
3. Meanwhile, combine the mayonnaise and Dijon mustard in a small bowl. Shred the cheddar cheese if you are using a block of cheese.
4. Once the microwave finishes, carefully remove the bowl and drain out the excess water.. Brush the Dijon/mayo mix on the top and side of the cauliflower. Try to cover as many of the florets as possible.
5. Sprinkle the cheese on top and press some on the side to get it to stick to the Dijon/mayo mix.
6. Place the bowl back in the microwave for another 2-3 minutes.
