What Is Carne Asada?

Carne asada is marinated beef, usually skirt steak, flank steak, sirloin, or others, that is grilled. It is served as a main dish, tacos, fajitas, or as part of  some other dish. It is a common option offered by street vendors and served in a number of ways.

My marinade has a sweet, tangy flavor that is just so delicious. No matter how much I make of this, there’s hardly any leftovers.

Here are a few tips to make this the best experience you can.

Oil the Grill. A big irritation when grilling is having the food stick to the grates. The reason for this is a simple step most people skip. When we cook on the stove or in the oven, it’s a no-brainer to use some kind of oil or cooking spray to prevent the food from sticking. But many don’t do that when grilling. So be sure to add some oil or cooking spray to the grate before adding the food.

Marinating Time. When marinating lean fibrous beef like skirt steak and flank steak, the longer the better. You can marinate it for as short as 2 hours if you need to cook it sooner, but it won’t be as tender or flavorful. I definitely recommend overnight.

Ingredient Notes & Substitutions

Skirt Steak – you can substitute flank steak.

Onions – I use sweet onions. Vidalia onions would be the best option for substitution, but you can sub yellow onions as well.

 

How Is Best Carne Asada Tacos Made?

Marinade

  1. Place all ingredients except the steak in a gallon sized ziptop bag and mix them. Next, place the steak in the bag, let out most of the air and seal the bag. Massage the marinade and meat to make sure the steak is completely coated. Place the bag in the fridge overnight.

Cooking the Steak

  1. Brush or spray the grill grates with canola or olive oil. Heat the grill to high heat – 500-700°F.
  2. Place the steak on the hottest part of the grill. Cook using the follow guide for your desired doneness:
    • Medium-rare: 3 to 5 minutes (internal temperature of 135° F)
    • Medium: 5 to 7 minutes (internal temperature of 140° F)
    • Medium-well: 8 to 10 minutes (internal temperature of 150° F)
  3. Let the steak rest for 5 minutes before slicing.

Garlic Lime Cream Sauce

  1. Add all ingredients to a mixing bowl and whisk together. For best flavor, make 1 hour ahead of time and let it chill in the fridge for 1 hour.

Tortillas & Toppings

  1. Divide the tortillas into 12 stacks of 2 tortillas. Corn tortillas tear easily so they need to be doubled up.
  2. Heat each doubled tortilla on the grill, about 2 minutes per side.
  3. Place some of the sliced steak on the doubled tortilla and add the toppings of your choice.

 

What Can I Do with the Leftovers?

The leftovers will keep nicely in fridge for us to up to 4 days in an airtight container. For best results, reheat this on the stove in a skillet with a little canola oil.

You can use the leftovers:

  • with a salad
  • on a sandwich
  • as fajitas
  • or as more tacos

 

Can I Freeze Carne Asada Tacos?

Yes, absolutely! You can freeze the raw marinating steak for up to 6 months. It actually infuses the flavor more. I often freeze many meats in a marinade – beef, chicken, and pork.

You can also freeze the cooked meat in a airtight container up to 6 months. Thaw it on the counter or in the fridge overnight. Reheat using the instructions above.

  • 2 pounds Skirt Steak
  • 1/2 cup Orange Juice
