Best Homemade Blue Cheese Dressing

My wife makes the absolute best blue cheese dressing. When going over our friends’ to hang out, they often ask us to bring buffalo wings, not for the wings, but for her Blue Cheese Dressing! It has been a regular at every Super Bowl party for the past 15 years! One of her secrets is she uses Gorgonzola cheese which is a milder blue cheese than the traditional one people often use.
Gorgonzola Cheese vs. Blue Cheese
So you go to the store and you see a tub of Blue Cheese and right next to it is a tub of Gorgonzola Cheese. What’s the difference? Which one should you choose? There are several differences, but what we are interested in is taste. Basically, Blue Cheese is a classification or category and Gorgonzola Cheese is a type of Blue Cheese. But I’m not going to bore you with the history and all the differences, blah, blah, blah.
Gorgonzola tastes the same as what you would pick up at the grocery store that’s labeled “Blue Cheese”, but is less sharp, similar to buying Sharp Cheddar verses Extra Sharp Cheddar. I like both Blue Cheese and Gorgonzola just fine, but I find that I can’t take the sharp flavor of Blue Cheese that much. I would put it on burgers, steaks, salads and more, but found it difficult to get through the entire meal. Once we started using Gorgonzola that all changed.
Crumbling the Cheese
Maybe it’s just me, but I hate going to restaurants and getting Blue Cheese dressing that is pretty much just dressing with huge chucks of Blue Cheese. Especially when I’m having it with buffalo wings. Has that ever happened to you? You have one or two wings left, but all that’s left of the dressing are these big chucks of Blue Cheese. We have a fix for that.
The first you do is empty the tub of crumbled Gorgonzola Cheese in a mixing bowl. Take a pastry blender or fork and smash it up to make the crumbles smaller. This will give you amazing flavor! Plus you get that yummy, creamy Blue Cheese flavor in every bite!
Next, add the sour cream, mayo, lemon juice, and salt and pepper and mix all thoroughly. Give it a taste and see if it needs more salt and pepper. You can serve it right away, or you can refrigerate it for an hour or so to let the flavors blend for a better taste. If you put it in a container that has a tight fitting lid, you can keep it in the fridge up to one week.
Tip: We often use our mini-blender to make this. Put the Gorgonzola in the blender and pulse a several times to make smaller crumbles. Then add the other ingredients and blend for a 30 seconds or so. It super simple!

Best Homemade Blue Cheese Dressing
Ingredients
- 1 4 oz pkg Gorgonzola Cheese, Crumbled
- 3/4 cup Sour Cream
- 1 cup Mayonnaise
- 1 Tbsp Lemon Juice
- Salt and Pepper to taste
Instructions

Crumble the Gorgonzola cheese in medium sized bowl. Use a pastry blender or fork to make finer crumbles. This helps to get the flavor throughout the dressing.

Add last 4 ingredients. Stir well.

For best results, refrigerate for at least 1 hour.
