Avocado Cucumber Mediterranean Salad

Mediterranean Salad

The Mediterranean diet is hailed as one of the best lifestyles to live by. It’s heart healthy and is great for losing weight and keeping it off! AND . . . it’s delicious, too!

I make this salad as a snack to have rather than chips or something similar. I wound up having it as a meal at times. Yeah! It’s that good and that filling!

What Goes in the Avocado Cucumber Mediterranean Salad?

This salad is so easy to make! The ingredients are easily found in most grocery stores:

  • Cucumber
  • Avocado
  • Roma Tomatoes
  • Red Onion
  • Feta Cheese
  • Red Wine Vinegar
  • Olive Oil
  • Garlic Powder
  • Kosher Salt
  • Dried Oregano
  • Black Pepper
  • Fresh Basil

Avocados

Avocados have good fat and are great for lowering cholesterol as well as having many other health benefits. However, since they don’t keep long, some find it challenging to pick out great avocados. Here’s a couple tips.

First, I try to find 3 or 4 avocados that are at different stages of ripeness. If you gently press near the stem end (the skinnier end) and it bounces back, that is perfect! I will buy 2 that are slightly harder than that one and maybe 1 that is a little softer. Of course, eat the softer ones first!

Next, store them in the fridge to keep them from ripening too fast. You know how it is . . . you have a couple avocados at home and you’re waiting for the right time to eat them, and within 2-3 days they are black inside. I’ve had avocados last up to 2 weeks in the fridge. No joke! I don’t care if anyone disagrees, the proof is in the pudding . . . or, the avocado, in this case! Whatever you do, never, never, never store them anywhere near bananas! They will turn to mush real quick!

Red Onions

Some people are intimidated by red onions or avoid them because they tend to be bitter and sometimes pack some heat. Here’s a simple way to cut that bite.

After cutting the onion, soak the pieces in a bowl of ice water for 10 minutes or more. This will pull out a lot of the sulfur in the onions, which is what gives them their heat. The flavor and crunch will stay intact. You can also try soaking them in 50/50 water and white vinegar as an alternative.

Ingredients

  • 1 cup Cucumber, diced
  • 1 cup Avocado, diced
  • 1 cup Roma Tomatoes, diced & seeds removed approx. 3
  • 1/2 cup Red Onion, diced
  • 1/4 cup Feta Cheese, crumbled
  • 3 Tablespoons Red Wine Vinegar
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Dried Oregano
  • 1/2 teaspoon Black Pepper
  • 1 Tablespoon Fresh Basil, chopped

Instructions

  1. Combine all ingredients in a mixing bowl and mix well.

  2. Serve with pita bread, pita chips, or on lettuce.

How to Select and Store Avocados

Here’s some tips to help you select the perfect avocados:

  • First, try to find 3 or 4 avocados that are at different stages of ripeness.

Store them in the fridge to keep them from ripening too fast. They’ll keep for a week or more. Don’t forget, you can also freeze them! Be sure to remove the pit and place in a sealed bag. They will last 3-6 months in the freezer.
