This uses my Best Caesar Salad Dressing which is simple and quick to make. Take this on the go or have it at home. You will never again buy Caesar salad from a store once you try this!
A Simple Salad
From my first experience with Caesar Salad, I was hooked. The creamy, tangy, salty goodness has become my favorite salad and salad dressing.
When I worked at Ruga in New Jersey, I would take a piece of bread and dip it in the Caesar dressing as a small bite while working. Hey, at least it wasn’t the Creme Brulee. That was the best Caesar dressing I’ve ever had. And many others said the same thing.
One of the most popular lunch items, especially among our businesswoman clients, was the Chicken Caesar Salad. It was so simple, quick, and easy. So much so that, for a long time, the waiters made the salad. Smoked chicken breast was already made, and so was the dressing. Some assembly was required, but easy-peasy.

My Chicken Caesar Salad is nothing extravagant, but guests believe it is. I took this to a BYO picnic and everyone surrounded me ogling my salad. I gave a few a small taste of the dressing. The looks on their faces as they went from”O-M-G” from the dressing to the sorrowful glare as they looked at their boring sandwiches. I don’t derive joy from the suffering of other, but that was a nice subliminal pat on my back.

Chicken
- Boneless Skinless Chicken Breast
- Olive Oil
- Garlic Powder
Caesar Dressing
- Egg
- Lemon Juice
- Cider Vinegar
- Worcestershire Sauce
- Mayonnaise
- Anchovy Paste
- Kosher Salt
- Black Pepper
- Garlic
- Grated Parmesan Cheese
- Canola Oil
Salad
- Romaine Heart
- Seasoned Croutons
- Grated or Shredded Parmesan Cheese
How Long Does the Caesar Dressing Last?
The Best Caesar Salad Dressing will last up to 7 day in the refrigerator. If you’re anything like me and my family, however, you’ll have that polished off well before then.

Cooking the Chicken
- Heat the olive oil in a medium skillet over medium-high heat. Add the chicken and season with the garlic powder, salt and pepper.
- Cook until the juices run clear, about 5-8 minutes.
Assembling the Salad
- In a large mixing bowl, add the Romaine lettuce, croutons, parmesan cheese, and chicken slowly add in the Caesar dressing and mix while adding the dressing.
- Add enough dressing to coat the lettuce and croutons to your liking.

Chicken Caesar Salad
Ingredients
Chicken
- 1 pound Boneless Skinless Chicken Breast, cut in 1/2 inch pieces
- 2 Tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- Salt and Pepper to taste
Caesar Dressing
- 1 Egg
- 1 Tablespoons Lemon Juice
- 1 Tablespoons Cider Vinegar
- 1/2 Tablespoons Worcestershire Sauce
- 3 Tablespoons Mayonnaise
- 2 teaspoons Anchovy Paste
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1 clove Garlic minced & smashed
- 1/2 cup Grated Parmesan Cheese
- 1/2 cup Canola Oil
Salad
- 1 head Romaine Heart, chopped in bite sized pieces
- 2 cups Seasoned Croutons
- 1 cup Grated or Shredded Parmesan Cheese
Instructions
Cooking the Chicken

Heat the olive oil in a medium skillet over medium-high heat. Add the chicken and season with the garlic powder, salt and pepper.

Cook until the juices run clear, about 5-8 minutes.
Whisking Instructions

Crack the egg into a medium mixing bowl and partially beat with a whisk. Add the lemon juice, vinegar, and Worcestershire sauce and mix in to the egg.

Next add the mayonnaise, anchovy paste, garlic, salt, and pepper. Whisk these with the other ingredients.

While whisking, pour in the oil in a thin stream and begin to whisk vigorously. Once you have added about half the oil, begin to pour the rest of the oil in faster.

Add in the parmesan cheese and mix thoroughly. Continue to whisk vigorously for about 30 seconds more.

For best results, refrigerate for an hour as this will help the flavors to blend and the dressing will thicken.
Blender Method

Combine all ingredients except the canola oil and parmesan cheese in a blender or small processor. Pulse about 4 or 5 times to slightly blend the ingredients.

Slowly pour the canola oil in and blend it in with the other ingredients.

Add in the parmesan cheese and blend for about 3-5 seconds.

Refrigerate for an hour as this will help the flavors to blend and the dressing will thicken.
Assembling the Salad

In a large mixing bowl, add the Romaine lettuce, croutons, parmesan cheese, and chicken slowly add in the Caesar dressing and mix while adding the dressing. Add enough to coat the lettuce and croutons to your liking.
Recipe Notes
A bit leery about the raw egg? If you have ever eaten mousse, meringue, custard, tiramisu, or drink eggnog, you have consumed raw eggs. If you are still uncomfortable about it, you can also buy pasteurized eggs.
