Pour the heavy whipping cream, white sugar, and honey into a metal mixing bowl.
Using a had blender or stand-up mixer on blend on medium speed for about 2-3 minutes. Turn off the blender/mixer and scrape the sides with a rubber spatula.
Resume blending on medium-high speed for another 3-5 minutes or until the cream is thick. Be careful not to over blend as you'll turn it into butter.
Tip: If you do not have either a hand blender or stand up mixer, you can use a whisk and muscle!
