Butter Poached Tilapia

Ingredients

  • 4 fillets Tilapia
  • 1 Tablespoon Olive Oil
  • 8 Tablespoons Butter
  • 1/4 cup Shallot, diced small
  • 3 cloves Garlic, minced
  • 2 Tablespoons Lemon Juice
  • 1 cup Feta Cheese, crumbled
  • 1 Tablespoon Fresh Dill, fronds chopped
  • 1 Tablespoon Fresh Basil, chopped
  • Fresh Lemon Slices (for garnish)
  • Salt and Pepper to taste

Instructions

  1. Heat your oven to 350º F.

  2. Heat the olive oil and 1 tablespoon of butter in a medium skillet over medium heat. Sauté the shallots and garlic until they are soft, about 2 minutes.

  3. Remove the pan from the heat and add the lemon juice and the rest of the butter. Stir until all the butter is melted.

  4. Season both sides of the tilapia fillets with salt and pepper and immediately place them in a glass roasting pan.

  5. Pour the butter sauce over the fillets and sprinkle fresh dill and feta cheese over each piece.

  6. Put the roasting pan in the oven and cook for 15-20 minutes. The feta cheese will not completely melt, but it will slightly.
  7. Remove the roasting pan from the oven. Garnish with fresh basil and lemon slices.
