Dijon Pork Chops with Herbed Potatoes

Ingredients

Herbed Potatoes

  • 1 pound Small Potatoes, quartered
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper

Dijon Pork Chops

Onion Brown Gravy

  • 2 Tablespoons Olive Oil
  • 1 large Onion, diced
  • 2 Tablespoons Butter
  • 1/4 cup All Purpose Flour * Keto & Gluten Free versions in Notes
  • 2 cups Beef or Vegetable Stock
  • 1 Bay Leaf
  • 1 teaspoon Kosher Salt
  • 1/4 teaspoon Black Pepper

Dijon Pork Chops

  • 4-6 Pork Chops, fat trimmed
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Dijon Mustard
  • 2 Tablespoons Water
  • 1 Tablespoons Worcestershire Sauce
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Dried Thyme
  • 1 Tablespoons Butter
  • Salt and Pepper to taste

Instructions

Herbed Potatoes

  1. Heat Oven to 450°. Place all ingredients in a mixing bowl and stir to evenly coat the potatoes.
  2. Put the potatoes in a glass roasting pan and cook uncovered for 45 minutes or until a fork easily slides into the potatoes.

Onion Brown Gravy

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the onions and season with 1/2 teaspoon salt. Cook until caramelized, about 10 minutes. Add the butter.
  3. Slowly whisk in the flour to make a rue. Gradually whisk in the beef stock
  4. Add the bay leaf and remaining 1/2 teaspoon salt and the black pepper. Reduce the heat to low and cook for another 5 minutes, stirring often to prevent it from sticking to the bottom.

Dijon Pork Chops

  1. In a small mixing bowl, mix the Dijon mustard, Worcestershire sauce, water, garlic powder, and thyme.
  2. In a medium to large skillet on medium-high heat, heat 2 tablespoons olive oil. Season both sides of the pork chops with salt and pepper. Cook the pork chops on both side for about 4 minutes on each side. Remove the pork chops and set aside.
  3. Use a basting brush to coat 1 side of each of the pork chops.
  4. Carefully remove the large bits from the pan.
  5. Add the butter to the pan. Once the butter melts, add the pork chops to the pan with the Dijon mustard mixture down. Use the basting brush to coat the side that is now facing up. Cook for about 1 minute.

  6. Flip the pork chops and cook for about 1 more minute.

Recipe Notes

Order of Cooking:

This meal has three components that you want to be done around the same time so that nothing gets cold. Here is a simple order of tasks that will help with that.

  1. Start by getting the potatoes in the oven since this takes the longest to cook.
  2. After the potatoes are in, then start cutting and mixing everything else.
  3. Get the onions for the gravy started, then start cooking the pork chops at the same time. The gravy will need more attention than the pork chops.
  4. Both the gravy and the pork chops should take only about 15 minutes total to cook, so you can gauge your time accordingly.
