Greek Cucumber Dill Macaroni Salad

Ingredients

  • 1 pound Cooked Macaroni
  • 1 cup English Cucumber, diced 1/4 inch
  • 1 cup Sweet Onion, diced
  • 1 cup Cherry Tomatoes, sliced in half
  • 1/2 cup Feta Cheese
  • 1/2 - 1 cup Mayonnaise
  • 1/2 cup Greek Yogurt (optional)
  • 3 Tablespoons Red Wine Vinegar
  • 2 Tablespoons Fresh Dill, chopped
  • 2 Tablespoons Garlic Powder
  • 1 Tablespoon Fresh Mint, sliced (optional garnish)
  • Salt and Pepper to taste

Instructions

  1. Cook the macaroni according to the instructions on the box for "al dente." Once the macaroni is finished cooking, place it in a colander and run cold water over it for about a minute to stop the cooking process. Let it drain then place the macaroni in a large mixing bowl.

  2. There are 2 options for the dressing. Both taste great!

    A) use 1 cup of mayonnaise

    B) use 1/2 cup of mayonnaise and 1/2 cup Greek yogurt

  3. Add the cucumbers, onions, cherry tomatoes, dill, garlic powder, salt, and pepper. Stir everything thoroughly.

  4. Add in 2 tablespoons of the red wine vinegar and mix again. Give it a taste to test the salt and vinegar level. If desired, add in the remaining tablespoon of vinegar and adjust the salt level.
