Pour the vegetable stock and olive oil into a 2 quart saucepan and bring to a boil. Slowly pour in the quinoa stirring while pouring it in.
Reduce the heat to simmer and add the rest of the ingredients. Cover and cook according to the instructions on the package, usually 20 minutes.
Once the quinoa is finished cooking, place it in the refrigerator for 20 minutes to cool.
While the quinoa is cooking and cooling, cut your vegetables.
After the quinoa has cooled, add it to a mixing bowl. Add the rest of the ingredients and mix thoroughly.
Serve immediately or chill in the refrigerator until ready to serve.
