Spinach Quiche

Cheesy, gooey, full of flavor! This longtime family favorite is so delicious! This Spinach Quiche is full of ricotta cheese and wrapped in Muenster cheese. My mother made this all the time and it went quickly! This is so easy to make and a fun way to get some spinach in your diet!

My mother’s Spinach Quiche was one of my favorites growing up. She had to make extra just so the rest of the family could have some. I know, I know . . . a young boy that loved spinach? I did! I would take a slice, heat it up and (no joke) put a side of ketchup on the plate. All these years late, I still eat it with a bit of ketchup. I’m weird like that.

But I do love this Spinach Quiche just the way it is. When I got married, there were 2 of my mother’s recipes my wife wanted to learn to make – this and her meatball (that’s a whole other story!). Well . . . my wife made it perfectly. It is a simple recipe, so there’s not much to it, and my wife is an amazing cook as well. However . . . dun dun dun! She had to experiment. She started to add *things* to it. She really is awesome and was trying hard to please me, especially right at the outset of being married. So she added other ingredients she knew I liked, like garlic. It really was sweet of her to do, but none of her creations equaled the simplistic beauty of this recipe.

Frozen Spinach

While I’m big on everything fresh, some frozen foods have their place. One 10 ounce package of frozen chopped spinach is equivalent to 4 bunches of fresh spinach. So if a recipe calls for 1 bunch of spinach, simply cut the frozen spinach in quarters, use 1 quarter and put the rest back in the freezer!

To thaw the spinach, break it apart and place it in a colander. It thaws rather quickly. One down side of frozen spinach is it has a lot of water. So you really need to squeeze it to get the water out or the quiche will be soggy and gross. So put some muscle into it!

Spinach Quiche

Ingredients

  • 12 ounces Muenster Cheese
  • 3 10 ounce packages Frozen Chopped Spinach thawed
  • 1 Egg
  • 10 ounces Part Skim Ricotta Cheese
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • Cooking Spray

Instructions

  1. Heat the oven to 375 degrees.

  2. Place all the thawed spinach is a colander. Squeeze as much water out of the spinach as you can using your hands or the back of a large spoon pressing against the sides of the colander.

  3. Thoroughly mix the spinach, ricotta cheese, egg, salt and pepper in a mixing bowl.

  4. Spray a 9 X 9 baking pan with cooking spray. Line the sides and bottom of the pan with half of the muenster cheese.

  5. Scoop the spinach mixture into the cheese lined baking pan and smooth the top to make it flat. Place muenster cheese on top until covered.

  6. Bake uncovered for 30 minutes. Let cool slightly for 5 minutes before serving
