Meatloaf Is Awesome!

I have always loved meatloaf. It was one thing I asked for all the time growing up. When I got a little older, I would hear all these jokes about meatloaf. I never understood them, that is until I started tasting the meatloafs the moms of my friends would make, lol! I have had my fair share of “mystery meatloafs” in my day, and you probably have as well.

Classic Meatloaf with Cheddar Cheese

One of the first things I made over and over to get a recipe just right was meatloaf. When I was about 17, 18 I had a friend that loved to cook. He use to cook soups for a local deli and everyone around would stop there for his masterpieces.

I was at his house one day and he was making meatloaf but he was putting Italian Sub meats and cheese in it. I was like, “what – in – the – world?” He told me you can put anything in meatloaf. So I did. I made my own Italian Sub meatloaf, curry meatloaf, even a Jamaican jerk meatloaf, and one with 3 different cheeses. The last was my favorite. And it still is.

Not too long ago, a friend sent me a text asking if I had a meatloaf recipe. So I sent this to her. She and her family loved it! I never posted this recipe because I felt meatloaf is just so pedestrian. After her reaction, however, I figured I would put it out there for the world to find. I’m confident that those who find this will make this their permanent meatloaf recipe!

 

Ingredients for Classic Meatloaf with Cheddar Cheese Classic Meatloaf with Cheddar

  • Ground Beef
  • Ground Pork
  • Sweet Onion
  • Fresh Garlic
  • Milk
  • Seasoned Breadcrumbs
  • Worcestershire Sauce
  • Fresh Parsley
  • Olive Oil
  • Dried Basil
  • Dried Oregano
  • Garlic Powder
  • Seasoned Salt
  • Black pepper
  • Egg
  • Shredded Cheddar Cheese optional

Ingredient Notes

Seasoned Salt – I love using seasoned salt with ground beef. I use it in my burgers all the time. My favorite is Morton Season-All Seasoned Salt. I like the flavor better than other brands.

Seasoned Breadcrumbs – I use 4C Seasoned Bread Crumbs. I like the seasoned to add some additional flavor.

Cooking Instructions

Preheat oven to 375º F.

In a medium mixing bowl, thoroughly mix the ground beef and ground pork.

Coarsely chop the onion and garlic and purée them in a food processor.

To the meat, add the onion/garlic puree, milk, bread crumbs, parsley, oregano, basil, seasoned salt, garlic powder, black pepper, Worcestershire sauce, olive oil, and egg.

Fold in the cheese.

Mold meat into a loaf and place in a loaf pan. Bake for 1 to 1 ½ hours.

  • 1 Cup Shredded Sharp Cheddar Cheese optional
