Sweet Potatoes As a Dessert

Yes! Just like pumpkin, sweet potatoes have long been used as a dessert. Even just adding some salt and butter to a baked sweet potato almost tastes like a dessert.

 

Sweet Potato or Yam?

This recipe is called Sweet Potato Casserole, but the ingredients say a can of yams. It can often be confusing to know what is a sweet potato and which is a yam. Yams are sweet potatoes. So the canned yams used in this recipe are sweet potatoes.

Simple Sweet Potato Casserole

This Simple Sweet Potato Casserole is my wife’s recipe that she got from her grandmother. She has tweaked it a bit to make it her own. I never had Sweet Potato Casserole before meeting her. But, the first time I tried it, I was hooked! When she says she’s going to make this, I’m like a little kid asking, “So when are you going to make the sweet potato casserole?” “Did you make it yet?”  And so on.

This can be served either during the meal or afterwards. Just a word of caution: the longer it sits, the marshmallows will begin to sink. So, if you’re planning n having this afterwards, I would recommend putting this in the oven when you sit down to eat the main meal.

 

What Ingredients Are in Simple Sweet Potato Casserole?Simple Sweet Potato Casserole

  • Canned Yams
  • Light Brown Sugar
  • Cooking Sherry
  • Table Salt
  • Apple Pie Spice Mix, store bought or homemade
  • Butter, softened
  • Mini Marshmallows

Ingredient Notes & Substitutions

Canned Yams – we use Bruce’s Yams

Table Salt – be sure to use regular iodized table salt.

Apple Pie Spice Mix – we use a premixed seasoning that has cinnamon, nutmeg, and cloves. I recommend purchasing a mix. You can also make you own using 1 tablespoon ground cinnamon, 1/8 teaspoon ground nutmeg, and 1/8 teaspoon ground cloves.

Butter – be sure to take out the butter about 30-60 minutes beforehand to make sure it softens.

 

How Is Simple Sweet Potato Casserole Made?

  1. Preheat oven to 350° F.
  2. Combine all ingredients except marshmallows in large bowl of mixer.
  3. Mix well, on slow speed at first, then increasing, until smooth.
  4. Pour mixture into 1.5-quart casserole dish.
  5. Bake 15 minutes.
  6. Remove from oven and cover the top evenly with marshmallows.
  7. Return to oven to bake 15-20 minutes longer.
  8. Remove when marshmallows are toasted and slightly brown.
  9. Serve and enjoy warm! Mmmm!

 

What Can I Do with the Leftovers?

The leftovers will keep well in the fridge in an airtight container for 5 day. You can also freeze it. You again will need to use an airtight container  and it’ll stay tasty for up to 3 months.

Ingredients

  • 1 40 oz can Yams drained, but reserve ¼ cup liquid
  • ¼ cup Light Brown Sugar
  • ¼ cup Cooking Sherry
  • 1/8 tsp Table Salt
  • ¼ tsp Apple Pie Spice Mix Cinnamon, Nutmeg, etc
  • ½ cup 1 stick Butter, softened
  • 2-2 ½ cups Mini Marshmallows
