Fusion foods have been around pretty much forever. It’s popularity ebbs and flows from time to time. It’s been around since humans began traveling and trading to different areas in the world. We are familiar with the influence Indian food and spice have had on food all over the world for centuries.

What is “Fusion” food? Fusion foods is taking ingredients and dishes from 2 or more different cuisines and blending them together. For example, one famous celebrity chef blends Asian and American BBQ and makes BBQ based sushi.

I love cucumber bites as an hors d’oeuvre. I also love the cucumber sandwiches that my wife makes. So I wanted to do a low carb version of her sandwiches. So, basically, the cucumber with some of the cream cheese mix is just a slightly altered version of her sandwich. However, I didn’t want to be cliché and do the same-old same-old. I wanted to jazz them up a bit, so I looked for ways to add a little something to make some sort of fusion. The problem I had, is I loved so many of the things I tried. I narrowed them down to these 3.

There are so many awesome things about these cucumber bites. First of all, they are a quick and simple appetizer that your friends, family, guests, everyone, will love! They take minutes to go together and can be made well in advance.

Make Ahead. These cucumber bites can be made hours before your guests arrive, even the night before. With minimal cooking of just the shrimp, these can be assembled, put on a plate or platter, and put in the fridge until you’re ready to serve them.

Cream Cheese Base. All three of these bites use the same cream cheese base with minor variations. So you don’t need to make 3 different recipes. You will make the base, divide it into 3 bowls, and add just 1 additional ingredient to 2 of them.

Lemon Pepper Salmon. This is the basic version utilizing the just the base on a cucumber slice with some lox, and topped with fresh dill.

Buffalo Shrimp. I use Frank’s Red Hot Seasoning Powder. I often use the powder in breading or in a batter. It’s really awesome stuff. I coat the shrimp with it and it gets crispy in the pan and gives a nice crunch. You can order some from Amazon by clicking the link.

Curry Salmon. We love Indian food, so this was a no-brainer. I added a little store bought curry powder to the base and that was all it needed. Topped it with lox and fresh cilantro and it was done.

What Can I Do with the Leftovers?

The leftovers will keep nicely in fridge for us to 3-4 days. They do tend to get a little soggy, so put a few layers of paper towel on the plate firstthen put the bites on the paper towel. Be sure to cover with plastic wrap.
