One Pan Cooking Craze

One pan meals are the best! It doesn’t matter if it’s a crock pot or Instant pot meal, in the oven, or on the stove, one pan (pot) meals make life so much easier. Let’s face it – we’re all super busy. So anything that can save time is worth it.

I am always trying to find ways to make sheet pan meals. I love to make one pan/pot meals on the stove, too, like my Chili, but I have to stand by to stir them from time to time. But these oven meal, I just stick it in, set a timer, and done!

To make this even better, I try to make them 30 minute meals so they are quick and easy for those crazy nights.

OK, so this isn’t exactly a one pan meal because you have to make the teriyaki sauce. But it mostly is, so . . . yeah.

Here are some tips.

Salmon Fillet. I always buy a filet with the skin on. Get a super sharp fillet knife to remove the skin. It cuts right off in a few seconds and save you a bunch of money.

What Ingredients Are in One Pan Teriyaki Salmon?One Pan Teriyaki Salmon

  • Salmon Fillet, skin removed
  • Broccoli Florets
  • Bell Peppers
  • Onions
  • Olive Oil
  • Salt and Pepper
  • Sesame Seeds
  • Green Onion

Teriyaki Sauce

  • Water
  • Soy Sauce (low sodium if possible)
  • Brown Sugar, packed
  • Garlic
  • Honey
  • Ground Ginger
  • Cornstarch

Ingredient Notes & Substitutions

Salmon – other fish will work well with this meal, too. Cod, tilapia, sole, and more are good subs. You can even sub shrimp or chicken.

Soy Sauce – I always use low sodium. You can use regular, but be careful of the salt content.

Brown Sugar – this would be light brown sugar. You can try dark, but it may be too sweet for some.

Honey – one of my favorite sweeteners, and very much underrated and underused. If you don’t have honey, sub more brown sugar.

 

How Is One Pan Teriyaki Salmon Made?

  1. Heat the oven to 400°F.

Teriyaki Sauce

  1. Add 1 cup of water, soy sauce, brown sugar, garlic, honey, and ginger to a medium saucepan over medium-high heat and whisk together.
  2. In a small bowl or cup, mix the cornstarch an 1 tablespoon of water. Pour that in and whisk. Turn the heat up to high and bring to a boil, stirring to avoid burning. Let the sauce boil for about 1-2 minutes until the sauce begins to thicken. Remove it from heat and set aside.

Fish and Vegetables

  1. Line a sheet pan with aluminum foil or spray it with cooking spray.
  2. Pat the salmon fillet dry on both sides with paper towel. Season the top side (as opposed to the skin side) with salt and pepper. Place it in the center of the sheet pan.
  3. In a mixing bowl, mix the broccoli, bell peppers, onions, and olive oil together and season with salt and pepper. Be sure all the vegetables are thoroughly covered with oil so they come out crispy. Place the vegetables on the sheet pan around the salmon fillet, but not on it.
  4. Ladle about half to 3/4 of the sauce on the salmon. Sprinkle the sesame seeds on the fish and the vegetables.
  5. Place the tray in the oven uncovered for 15-20 minutes or until it begins to flake.
  6. Serve with white rice and garnish with green onions. Use the remaining teriyaki sauce as a dipping sauce or spoon some on top of the fish, vegetables, and rice.

 

What Can I Do with the Leftovers?

The leftovers will keep nicely in fridge for us to 3-4 days. Reheat in a skillet, oven, or the microwave.

 

Can I Freeze One Pan Teriyaki Salmon?

Yes, but it will tend to get a fishy flavor.

Ingredients

  • 2-3 pounds Salmon Fillet, skin removed
  • 2 cups Broccoli Florets, cut small
  • 2 cups Bell Peppers, sliced various colors
  • 2 cups Onions, sliced
  • 2 Tablespoons Olive Oil
  • Salt and Pepper to taste
  • 2 Tablespoons Sesame Seeds
  • 1-2 Green Onion, sliced on a diagonal for garnish

  • 1/4 cup Soy Sauce (low sodium if possible)
