Greek food is one of my favorite Mediterranean cuisines. The Mediterranean diet is hands down the best! Don’t take my word for it – you can look it up. Switching to a lifestyle that follows the Mediterranean way of life when it comes to food is consistently ranked the healthiest. However, that’s not all. It is widely publicised that it also takes the pounds off and keeps them off unlike other fad “listyles” that cut out key nutrients.

Simple Greek Tomato and Cucumber Salad

This salad is so filling it can make a meal by itself. The bright and color ingredient make it as if it was saying, “Eat Me!”

Red Onions. These can be quite pungent and pack some heat. If you don’t like that, here’s a tip to help lessen that. Place the sliced onions in a bowl of room temperature water for 10-15 minute. This will draw out the sulfur and make the onions more pleasant.

Dried Marjoram. Marjoram is related to oregano, but with a milder taste. You can certainly use oregano, but the marjoram gives this a more delicate, classy, flavor.

  • English Cucumber
  • Red Onions
  • Garbanzo Beans (Chickpeas)
  • Tomato
  • Orange Tomato (optional)
  • Kalamata Olives
  • Feta Cheese
  • Olive Oil
  • Red Wine Vinegar
  • Fresh Dill
  • Fresh Mint
  • Garlic Powder
  • Dried Marjoram
  • Kosher Salt
  • Black Pepper

 

Ingredient Notes & Substitutions

English Cucumber – this is also known as a ‘seedless cucumber.’ You can substitute just about any cucumber that is commonly found in a typical grocery store.

Red Onions – these tend to have a bite that some people don’t like. You can follow the instructions above, or you can use a sweet onion instead.

Orange Tomato – I like my food to be colorful, so I look for some other colored tomato besides red. But, that’s optional. You can use all red tomatoes.

Dried Marjoram – you can substitute Greek oregano, but it is a bit stronger than marjoram.

  1. Combine all the ingredients in a large mixing bowl and mix thoroughly.

 

What Can I Do with the Leftovers?

The leftovers will keep nicely in fridge for us to 5-7 days in an airtight container.

Ingredients

  • 1 cup English Cucumber, sliced
  • 1 cup Red Onions, sliced
  • 1 14.5 ounce can Garbanzo Beans (Chickpeas)
  • 1/2 cup Tomato, diced
  • 1/2 cup Orange Tomato, diced (or another color other than red)
  • 1/2 cup Kalamata Olives, cut in half lengthwise
  • 1/2 cup Feta Cheese, Crumbled
  • 1/4 cup Olive Oil
  • 3 Tablespoons Red Wine Vinegar
  • 2 teaspoons Fresh Dill, chopped
  • 2 teaspoons Fresh Mint, chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Marjoram
  • 1 teaspoon Kosher Salt (or 1/4 teaspoon table salt)
  • 1/2 teaspoon Black Pepper

Instructions

  1. Combine all the ingredients in a large mixing bowl and mix thoroughly.
