Pork Chops – How to Choose the Right One
Pork chops are pork chops, right? Not exactly. There are a bunch of different pork chops that are taken from different parts of the pig. Here are the 3 main pork chops that are common in most grocery stores:
- Rib Chops – has a rib bone that comes off the end of the pork chop that looks like a handle
- Loin Chops – has a “T” shaped bone on one end, similar to a porterhouse steak
- Boneless Loin Chops – these are the most common and are boneless; they come in thick cut and thin sliced
For this recipe, I prefer the Rib Chops with Loin Chops a close second. They cook quickly and have tremendous flavor. Brining pork chops is recommended to keep them moist.

Order of Cooking
In order to make sure all the elements of your meal finish about the same time, the order to start each component is crucial. This meal has three components that you want to be done around the same time so that nothing gets cold. Here is a simple order of tasks that will help with that.
Start by getting the potatoes in the oven since this takes the longest to cook.
After the potatoes are in, then start cutting and mixing everything else.
Get the onions for the gravy started, then start cooking the pork chops at the same time. The gravy will need more attention than the pork chops.
Both the gravy and the pork chops should take only about 15 minutes total to cook, so you can gauge your time accordingly.

Ingredient Notes & Substitutions
Small Potatoes – this would be potatoes that are about the size of golfballs. I use small golden potatoes which has a nice delicate flavor that works beautiful with the gravy. You can use whatever potatoes you have.
Dijon Mustard & Whole Grain Mustard – some recipes use only Whole Grain Mustard. I find the mix of the two different mustards offers a more balanced flavor which tastes so much better.
I use Maille Dijon Originale Traditional Dijon Mustard & Maille Old Style Mustard because I feel they are the best out there. You can use whatever you have, but I highly recommend Maille.
