Best Homemade Blue Cheese Dressing
I used to be a big salad person. But I got tired of the same old, same old. So I’ve been getting more and more creative with my salads. Some have been duds, but this one gets high marks from my entire family and all my friends I’ve served this to!
Serving Salads to Family and Friends
When it comes to salads, people typically let each person put whatever toppings they personally like on their own salad. And I do that, too, at times. Especially when we’re having a large group over. Lately, however, I’ve been making the salads and serving them complete to my family and friends (with the exception of when someone has a particular food allergy). I couldn’t be happier with the response! When you order a salad at a restaurant it comes with all the toppings mixed in. And my rule for my kids, you have to try it at least once. They absolutely love this salad!
Best Homemade Blue Cheese Dressing
My wife makes the absolute best blue cheese dressing. When going over our friends’ to hang out, they often ask us to bring buffalo wings, not for the wings, but for her Blue Cheese Dressing! It has been a regular at every Super Bowl party for the past 15 years! One of her secrets is she uses Gorgonzola cheese which is a milder blue cheese than the traditional one people often use. I wanted to keep this Blue Cheese and Bacon Salad recipe simple, so I didn’t include the recipe for the Blue Cheese Dressing in it. Follow this link for the recipe . . .

Red Onions
Some people are intimidated by red onions or avoid them because they tend to be bitter and sometimes pack some heat. Here’s a simple way to cut that bite.
After cutting the onion, soak the pieces in a bowl of ice water for 10 minutes or more. This will pull out a lot of the sulfur in the onions which is what gives them their heat. The flavor and crunch will stay intact. You can also try soaking them in 50/50 water and white vinegar as an alternative.
Crispy Prosciutto
Of course, I’m a “fresh is best” guy, but my wife found these little packages of pre-diced prosciutto. I love it! It’s so easy to use when I want to crisp it up as a topping. Whether you use fresh from the deli or pre-diced prosciutto, getting crispy is a cinch!
Simply warm a small skillet over medium heat and toss the cut prosciutto in. No oil needed as it has its own fat. However, you do want to be careful, though, as it has much less fat than your run of the mill bacon. So be sure to keep the heat on medium and stir it regularly! Place it on a plate with a paper towel when your done to let it cool.
