Clean off the potatoes and cut them into quarters. Place them in a 4 quart pot add water until the potatoes are covered by about 2 inches of water
Place the pot on the stove and bring the water to a boil. Boil for about 15 minutes and test with a fork. The potatoes are done if the fork is able to slide through a potato with ease.
Drain and transfer the potatoes to a mixing bowl.
In a separate bowl mix the remaining ingredients to ensure they are mixed thoroughly.
Using a sturdy fork or a potato masher, begin breaking up the potatoes. You want to keep it mostly chucky. Next, use a spatula to make sure all the ingredients are thoroughly mixed.
Garnish with chopped chives.
