The wonderful flavors of chives and herbs with the creaminess of the sour cream and butter make this a delightful alternative to your standard mashed potatoes. Sour Cream and Chives 

Sour cream and onion flavor is a wildly popular flavor that is loved by millions of potato chip lovers around the world. Even with the many varieties of flavors that have come into existence in my lifetime, my all-time favorite is still sour cream and onion.

The flavor reportedly came into existence when someone mixed a package of instant onion soup with sour cream. Thus was born the French Onion Dip which lead to the sour cream and onion flavor. The chives part is a spin on the onion part.

SInce this is one of the most loved flavors of potato chips, and, again, my favorite, I wanted to try it out on potatoes. I love the rustic smashed potatoes, and the night I made this I also made a stuffed pork loin, so I decided to go with smashed potatoes instead of mashed.

(My other favorite is jalapeno potato chips. Maybe I’ll venture into that realm another time.)

What Are Smashed Potatoes?

When you think of mashed potatoes, you no doubt think of those smooth and creamy potatoes that are so delicious. They are full of things that people on a diet of over 40 don’t want to think about like cream, butter, and other similar ingredients. We just want to indulge in their decadent creaminess because they are definitely high on the list of comfort foods. But what are “Smashed” potatoes?

Mashed potatoes and smashed potatoes are often times used interchangeably. That’s because many people make them the same. However, there is a major difference.

Mashed potatoes are smooth and creamy because they are usually made with a mixer that whips the potatoes. Whereas Smashed potatoes are more rustic, having larger pieces of potatoes with some smooth creaminess between the chucks. A potato masher or a sturdy fork is typically used to smash the potatoes.

  • Golden Potatoes
  • Sour Cream
  • Fresh Chives
  • Mayonnaise
  • Butter
  • Half and Half
  • Onion Powder
  • Garlic Powder

Ingredient Notes

Golden Potatoes – Golden potatoes are great for this because they are creamier than your regular russet potatoes. They also have a little sweetness to them, so they are perfect for this dish.

If you can’t find these, use another small potato variety before looking at larger ones.

 

Cooking Instructions

  1. Clean off the potatoes and cut them into quarters. Place them in a 4 quart pot add water until the potatoes are covered by about 2 inches of water
  2. Place the pot on the stove and bring the water to a boil. Boil for about 15 minutes and test with a fork. The potatoes are done if the fork is able to slide through a potato with ease.
  3. Drain and transfer the potatoes to a mixing bowl.
  4. In a separate bowl mix the remaining ingredients to ensure they are mixed thoroughly.
  5. Using a sturdy fork or a potato masher, begin breaking up the potatoes. You want to keep it mostly chucky. Next, use a spatula to make sure all the ingredients are thoroughly mixed.
  6. Garnish with chopped chives.

Ingredients

  • 24 ounce bag Golden Potatoes
  • 1/4 cup Sour Cream
  • 2 Tablespoons Fresh Chives, chopped
  • 1 Tablespoon Mayonnaise
  • 1 Tablespoon Butter
  • 1 Tablespoon Half and Half (you can use milk)
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Garlic Powder
  • Salt and Pepper, to taste
